Here’s a great summer recipe that is light and easy. This recipe serves four and takes less than 35 minutes to prepare. You can add cooked shrimp or chicken to this recipe to increase the protein count.

Prep Time: 20 Min

Cook Time: 15 Min

Yield: 4 Servings

  • 12 oz pasta (linguine, spaghetti or any other kind of pasta you prefer)
  • 1/2 cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons lemon zest
  • Salt and pepper to taste

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.

  3. Add the cooked pasta to the skillet and toss with the garlic and olive oil until well coated.
