Lemon Basil Pasta
Here’s a great summer recipe that is light and easy. This recipe serves four and takes less than 35 minutes to prepare. You can add cooked shrimp or chicken to this recipe to increase the protein count.

Ingredients:
- 12 oz pasta (linguine, spaghetti or any other kind of pasta you prefer)
- 1/2 cup fresh basil leaves, chopped
- 2 garlic cloves, minced
- 1/4 cup extra-virgin olive oil
- 1/2 cup grated Parmesan cheese
- 2 tablespoons lemon zest
- Salt and pepper to taste
Directions:
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1-2 minutes or until fragrant.
- Add the cooked pasta to the skillet and toss with the garlic and olive oil until well coated.
- Add the chopped basil leaves and lemon zest to the skillet and toss until the pasta is evenly coated.
- Add the reserved pasta water, a little at a time, to the skillet to help create a sauce. Toss the pasta with the water until well combined.
- Sprinkle the Parmesan cheese over the pasta and toss until the cheese is melted and evenly distributed.
- Season with salt and pepper to taste.
- Serve the lemon basil pasta immediately and enjoy!
